-2 large eggs, lightly beaten -3 tablespoons soy sauce Unseasoned cooked rice or brown fried rice can be substituted for the white rice.
If using cooked rice, add it to the pan in Step 3. Instructions: 1. Cook rice according to package instructions. 2. In a large skillet, heat 1 tablespoon oil over medium heat.
Add onion, bell pepper, garlic, salt and pepper; cook until vegetables are soft, about 5 minutes. 3. Stir in cooked or uncooked rice and crabmeat; cook for 2 minutes until heated through. 4. Make a well in the center of the mixture; add beaten eggs and soy sauce.

3. Place flour in a shallow dish. Dredge cakes in flour until coated and place on the prepared baking sheet. 4. Melt remaining 2 tablespoons of butter and brush over top of each cake.
5 Bake for 12 to 15 minutes in the preheated oven, until golden brown.
