1/4 cup chopped fresh parsley Instructions: 1. In a large pot over medium heat, heat olive oil.
Add onion and garlic; cook until softened, about 5 minutes. 2. Add tomatoes, chicken or vegetable stock, sugar, salt and pepper; bring to a boil. 3. Reduce heat and simmer for 30 minutes.
4. Stir in parsley and serve.
