This Caramel Covered Marshmallows Recipe is so easy and so delicious! I am obsessed with caramel and marshmallows, so this recipe is right up my alley. The great thing about this recipe is that you can make it as simple or as complicated as you want.
You can either use store bought marshmallows and caramel, or you can make your own. If you are feeling really ambitious, you could even make your own marshmallows! I like to use store bought marshmallows because they are quick and easy.
I also like to use a good quality caramel sauce. My favorite brand of caramel sauce is from Trader Joe’s. It is thick and creamy and has the perfect amount of sweetness.
To make these Caramel Covered Marshmallows, simply dip each marshmallow in the caramel sauce until it is evenly coated. Then place the marshmallow on a sheet of wax paper to set. Once the caramel has hardened, you can enjoy your delicious treat!
1 cup granulated sugar
1/2 cup light corn syrup
1/4 cup water 1 teaspoon vanilla extract 2 tablespoons butter, divided
Dash salt 6 drops yellow food coloring 6 drops red food coloring

Reserve the other half of the mixture for later. Add 8 cups of miniature marshmallows to the dish, and press down firmly. Allow to cool for 10 minutes.
Pour the remaining mixture over the top of the marshmallows. Allow to cool completely before serving.

Allow the mixture to boil for 4 minutes without stirring. Remove the pan from the heat and stir in the vanilla extract. Pour the mixture into a glass or ceramic bowl and allow it to cool completely.
Once cooled, store the caramel in an airtight container in the refrigerator for up to 2 weeks.
